I love tacos. Y’all. I cannot even put into words how much I love tacos. I mean, who doesn’t love tacos?!?! I wanted the first recipe on my blog to be a special one. And how do you really get better than tacos?

As I began following a more plant based lifestyle, some of my favorite foods became harder to fit into my diet. So, I took to the kitchen to try and create some recipes that not only tasted good, but were also good for me. Having fibromyalgia, I often don’t have the energy to cook a big meal. With that being said, most of the recipes you find on my blog will also be quick and easy.

Back to the tacos at hand. Even my meat eater hubby loves this taco filling. You could also use this filling atop a taco salad or to fill some quesadillas or burritos if you’re wanting to change it up! 🙂 Hope you love them as much as I do!

Yummy Chickpea Tacos!!!

Yields: Fills about 8-10 tortillas or shells

 1 Can of chickpeas drained and rinsed thoroughly
 3 cloves of garlic minced
 1 small white onion diced (or half a large one)
 1 taco seasoning of your choice
 2 tbsp olive oil
 tortillas or taco shells of choice (GF if necessary) OR lots of leafy greens for a big taco salad!
 ½ cup tortillas or taco shells of choice (GF if necessary) OR lots of leafy greens for a big taco salad!

Optional:

  • diced avocado
  • salsa
  • guacamole
  • sour cream (if not dairy free)
  • additional diced onion
  • diced tomatoes, green peppers and jalapeños
  • chopped lettuce
  • shredded cheese of your choice (if not dairy free)
  • Taco Seasoning (per can of chickpeas)
  • 2 tsp chili powder
  • 1/4 tsp salt (I like fine sea salt)
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1 tsp onion powder
  • 1 tsp paprika
  • pepper to taste (I usually grind some fresh black pepper
  • cayenne pepper (to taste)
  • crushed red pepper flakes (to taste....I like mine spicy so I add a good bit to my seasoning!)

Heat a medium sized skillet with 2 tbsp olive oil over medium low heat. (I usually have my stove set at about a level 4-4.5)

Sauté the garlic and onion about 3-5 minutes or until fragrant and the onions are translucent.

Add drained and rinsed chickpeas and sauté about 1 minute.

Add taco seasoning and water to the chickpea, onion and garlic mixture and stir.

Bring to a boil then reduce heat to a simmer. Simmer for about 10-15 minutes or until most of the liquid has been absorbed.  (This is a great time to prepare your taco fixins'!)

Remove from heat and roughly mash the mixture with a potato masher (or fork, if you don't have a masher). Until it looks something like this:

Spoon onto your prepared tortillas, taco shells or prepared salad greens. Load them up with the toppings of your choosing and enjoy! 🙂
